Jerk chicken burgers with a simple salad and sweet potato wedges

So – this is one is really simple, tasty, healthy….

You’ll need:

  • A couple of chicken breasts
  • Jerk seasoning – (allspice, scotch bonnet chilli, cinnamon, cloves, thyme, garlic, salt, pepper, nutmeg)
  • Or…
  • Your favourite jerk seasoning pre-made. (I’ve tried loads, but shop around for your perfect mix)
  • Salad leaves
  • 1 onion
  • Deli Rolls, cut length ways
  • Sweet potato

Method

Cover the chicken with your jerk seasoning and ideally leave over night or for a few hours. If you can’t leave for at least an hour or two I wouldn’t bother making this – the flavours won’t have chance to get in the chicken enough.

Peel your sweet potato and chop in half length ways then twice more to make some nice looking wedges. Dust with a bit of your seasoning along with some extra salt, pepper and thyme then mix with a bit of olive oil. Chuck in a hottish oven for 30-45 minutes (or until they look about right) turning occasionally.

When you are ready to cook, get a griddle pan or bbq on the go and get it to a medium/low heat. Press your chicken down on the grill and don’t be tempted to move it for at least 10 minutes – remember to not have the grill too hot. This should give it a nice outer crust that won’t stick when you turn it after 10 mins or so. Whilst cooking I like to squeeze over fresh lemon and brush on some extra pre-bought jerk sauce. Whilst the chicken is on, also cut an onion in half and griddle that too.

After 15-20 mins or so, take your chicken off and cover to rest, then toast your deli rolls on the griddle pan for a couple of minutes whilst you plate your salad and chargrilled onion. Mayo up the deli rolls, chuck your seasoned wedges on the plate and then build your burger. Winner!
